A bit of table feel might help, but I'll go with my gut and bid 3♥. At least if it's wrong, it's going to be horribly wrong!

I am not a fan of multi vs multi, this version you suggest of psycke vs psycke doesn't look much better.

yes, he would.. at least, this partner would. You can forget all constructions with 6+ hearts in partner's hand

Could pard bid this way with xx Qx AKxx AJxxx? How about x Axx AKxx Kxxxx? It seems unlikely partner would keep doubling if he had hearts unless he was 15(43) with a very good hand. Anyways, if you bid 3H and you're wrong you're completely screwed so I'd just bid 3C for survival purposes.

would you ever consider 2N instead of the second double with your example hands? Or would you need equal minors to do that? Or are you looking for a penalty enough times to double again?

Yes I thought of that, I would be hoping partner would pass the X but maybe 2N=minors X=3 suited with hearts? I don't know... I would be very scared to bid 3H though lol

But I wonder if partner might have a strong 1444 and 3H is still our best spot. Part of this is style - does partner think it's right to overcall 1NT on a hand like that?
I can't face defending 2Sx, partner must have at most a singleton.
No-one has suggested 2NT yet. If partner thinks it's natural, that's not a disaster. If partner thinks it's scrambling, showing doubt about where to play, then that's not a disaster.

He eventually bid 3H, although I half-convinced him that 2NT might be better - 2NT (scramble) works opposite 1345 and 1453 but loses opposite 1444.
