Well, my mind is closed and I hate 1NT.
I would bid 2C. Failing that I would pre-empt in clubs.
I fail to see what 1NT is supposed to achieve. Does it pre-empt the opponents? No. Does it describe your hand to partner? No. Is it a difficult psyche for the opponents to deal with? No.

Playing poor opponents who don't know what a penalty double looks like 1NT might work, but playing poor opponents anything else will probably work equally well...
