Why does my defense suck? It's much worse than my declarer play.

NO. declarers are subject to the variance of opening leads, and a much tougher time getting the layout right. I'm biased. I'm 100x better on defense than I am at declaring, its just about visualizing layouts and having feel for what your partner has.
