Can I set the level of playing in the table? say beginners.

No, but you can set table notes (which nobody reads) and set "permission required to play", so you can review people coming in.

Note that Bridge skill as self-rated on BBO is one of those "as valid as a used-car salesman's pitch" things. Sometimes, it's within a few yards of accuracy - but possibly only by coincidence.
