Would have preferred to be in 2 or 3 diamonds rather than defending 1NTx

I know its off shape but diamonds is the available suit

Some people managed to defend NT but not sure how

Isn't responding to a takeout dbl with no points and a flat hand a little optimistic?

Yes but sometimes a takeout is a cry for help or please bid anything
Isn't passing 1NT doubled with no points even worse :(

I always thought that having a weaker hand made it more important to take out a doable. North has a clear 2 bid, in my opinion.
