Okay, so over your 2♦ partner bids 2♠. I see Andy bids 3♣ I assume everyone else does the same? Over 3♣, partner bids 3♦... (Which I presume is Forcing?) now what?

2♠ by partner was game forcing, 3♣ by us is automatic after that. Over partner's 3♦, we are trying to probe for the best game. The most descriptive call you can make is clearly 3♥.

I know some people who play 2♦ showing 3+ cards, but I supose that's not standard.

No, you wrongside 3NT too often if partner holds Qx for example. If partner lacks a heart stopper, he can stall with 3♠, to enable you to bid 3NT.
